Avocado and Zucchini Pasta

A healthy body functions better, feeding it good quality food is essential for it to work properly. Good food need not be boring, but it does have to mean something good to your body. Junk food is junk and represents no value to your body whatsoever, it tastes great and is fun but should only make up a very small part of your diet otherwise you will be sick and fat. Make sure that everything you cook is from whole ingredients and the portions are representative of your weigh loss/gain goals. Spend as much time as you can getting fitter and stronger and your life will be far better and longer for it.

Avocado pesto

  • 2 ripe avocados
  • 2 tbsp olive oil
  • 60g Brazil nuts
  • Juice of 2 limes
  • A few mint leaves
  • Salt and pepper

Put Brazil nuts in food processor and blend for minute or two until crushed.
Add avocado flesh, olive oil, lime juice, mint leaves and sprinkle of salt and pepper.
Blend.

Spiralize 2 large Zucchini

Sauté 200g of chestnut mushrooms for about 5 minutes, then add the spiralized Zucchini and pesto to pan and heat gently for a couple of minutes to warm up the dish and soften the noodles a little.

Serves 2

This pesto is worth making double of and using to dip raw veggies or mixed in with your grains and vegetables, it’s delicious and full of healthy vitamins, minerals, healthy fats, fibre and protein, quite a powerhouse of goodness.
