Eggs – a very quick fix, a great source of protein – a nutritional powerhouse

 

  • A source of riboflavin, which helps our body break down foods into energy
  • A rich source of vitamin B12 vital for producing red blood cells, as well as vitamin D and selenium
  • Contains vitamin A whichever good for your eyesight
  • Vitamin E which helps to fight off free radicals that can cause cellular and tissue damage

 

 

And now an easy recipe to use these eggs

 

Lightly grease 8 hole muffin tin, set oven at 175 Celsius

 

8 eggs

Fillings of your choice – chopped tomato, pepper, onion,

 

Mix 8 eggs in bowl, season, add small amount of filling of your choice (chopped tomato, bell pepper, onion, mushrooms, a few pre-cooked peas) into each muffin tin, pour egg mixture on the top of the filling.

 

Bake for about 20 minutes

 

These can be eaten hot or cold, so stored in the fridge could be eaten over a couple of days.
