Eggs – a very quick fix, a great source of protein – a nutritional powerhouse

And now an easy recipe to use these eggs
Lightly grease 8 hole muffin tin, set oven at 175 Celsius
Fillings of your choice – chopped tomato, pepper, onion,
Mix 8 eggs in bowl, season, add small amount of filling of your choice (chopped tomato, bell pepper, onion, mushrooms, a few pre-cooked peas) into each muffin tin, pour egg mixture on the top of the filling.
Bake for about 20 minutes
These can be eaten hot or cold, so stored in the fridge could be eaten over a couple of days.
