Gluten free low sugar muffins

My wife Paulina is Celiac which basically means she has an extreme intolerance to gluten and as a result our house is mostly gluten free. Over the last few years more and more shops have started to stock gluten free versions of most products. The problem with them though is they don’t really taste very good and are much more expensive. My two sisters, mum and two aunts are all amazing cooks and have always relished the challenge of cooking for my wife and over the years have perfected many great gluten free versions of popular meals and treats. Now that I am getting a bit more computer savvy I am going to begin putting these recipes onto my site so that you can try them out yourself.

My wife does not spend much time wearing the chefs hat, she is more than happy to spend countless hours painting and perfecting her pretty nails but more than 10 minutes preparing food and she is bored senseless. This however does work in our favour as both of us have limited patience in the kitchen, hers because she does not like cooking and mine because I am usually far to hungry to wait for hours. As a result we have managed to work out hundreds of quick and easy ways to get something tasty and healthy on our plates within minutes. Here is one of the healthy treats that is a staple in our household.

Gluten free low sugar muffins

 

 

Ingredients

  •  1 Cup almond flour
  •  3 Majool dates
  •  2 Ripe bananas
  •  1 Teaspoon of vanilla extract
  •  2 Tablespoons of coconut oil
  •  1/2 Teaspoon of baking soda (gluten free)
  •  1/4 Teaspoon of pink himalayan salt
  • 3 Eggs
  • You can add blueberries pecans or a few dark chocolate chips if you like

 

 Step 1.

Put bananas, eggs, dates, vanilla and coconut oil in the food blender and mix until smooth.

 

 

 

 

 

 

 

Step 2.

Add the almond flour, baking soda and salt and blend again for 30 seconds.

Step 3.

Grease the muffin trays with a little coconut oil.

 

 

 

 

 

 Step 4. 

Spoon the mixture into the muffin tray (makes 12)

Step 5. 

Bake at 175 celcius/350 fahrenheit for 15- 17 minutes
