Low Fat Curry
Dieting is hard and sometimes you just need something with a bit of extra flavour here is a recipe for low fat curry its not something that i would include in your daily diet but it is definitely a better option than the ones you buy in a jar, this Goan prawn balti has a lot less fat than most and is lower in calories, it also has some nice fresh ingredients to fill you up with nutrients and lean protein.
GOAN PRAWN BALTI
1 tablespoon olive oil
1 onion thinly slice
1 tablespoon freshly grated ginger
2 cloves garlic, crushed
1 red chilli, seeded and sliced
2 tablespoons Balti curry paste
400ml can reduced fat coconut milk
3 medium tomatoes roughly chopped
300g raw king prawns
200g baby spinach
1 Preheat oven to 220C, gas mark 7. Heat oil in large pan, added the onion, chilli, ginger and garlic and cook for 5 minutes until softened and golden.
2 Add the curry paste, coconut milk and tomatoes, cover and simmer gently for 10 minutes.
3 Stir in spinach and prawns and cook for 2 minutes until prawns are pink and cooked through and spinach has wilted. Serve with plain rice of your choice.
