Paleo Carrot Cake

After a week of doing squats, sprints, push ups and keeping your diet tight and clean its understandable that when the weekend comes you want to cut loose and eat something for your tastebuds, not your body ! In our house we are into our paleo treats and the carrot cake is one of my favourites. The ingredients are healthy and tasty so you will feel like you are cheating the diet.

Paleo Carrot Cake Ingredients (cake)

  • 3 cups of almond flour
  • 1 teaspoon himalyan pink salt
  • 1 teaspoon gluten free baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 5 eggs
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1.5 cups freshly grated carrots
  • 1.5 freshly grated apple
  • 1/2 cup of roasted chopped hazelnut

Paleo Carrot Cake Ingredients (frosting)

  • 300 grams full fat cream cheese
  • 3 tablespoons honey
  • 1 tablespoon unsalted butter

1. Put the Almond flour, Himalayan pink salt, Baking soda, Cinnamon, nutmeg, Eggs, Honey, Coconut oil in a blender and blend to paste.

 

 

 

 

 

2. Combine the mixture with the freshly grated apples and carrots

 

 

 

 

 

 

 

 

 

 

 

3. Place the mixture into two muffin trays making a total of 20 muffins and bake for 12-15 minutes on 350f the edges should be brown but the centre still a little wet

4. Mix the butter, cream cheese, and honey with a mixer until fluffy

Cover the cakes in the cream cheese and eat them all up !!!
