Quick veggie rice and beans

Quick Veggie Rice and Beans

500ml stock

150g wholegrain basmati rice

400g can borlotti beans (drained and rinsed)

100g frozen peas

1 medium courgette, coarsely grated

Large handful of baby spinach leaves

1 tablespoon chopped mint/parsley


Bring stock to the boil and add rice and beans. Cover and simmer for 20 minutes

Add peas and cook for further 5 minutes or until rice is cooked

Stir in grated courgette, spinach and herbs, season to taste

Could be served on its own as lunch or with salmon or grilled chicken for dinner


Serves 2

Ready in 25 minutes
